Zucchini Bread

Yay, summer! Yay, Farmers' Market!

Zucchini Bread

1 cup canola oil
3 eggs
1 t. vanilla
2 cups sugar
2 cups white flour
1 1/2 cups whole wheat flour
1/2 t. salt
2 t. baking soda
1 t. cinnamon
1/2 t. nutmeg
2 cups grated zucchini
*1-2 cups raisins, nuts, or dairy-free chocolate chips, optional

Blend together oil, eggs, sugar, and vanilla. Add remaining dry ingredients. Stir in zucchini and optional ingredients. Spread into two loaf pans. Bake at 350 degrees one hour or until done. I am told this bread freezes well, but it has never made it to the freezer in our house.

  4. OK, I made this today. It is pretty yummy. I put chocolate chips in it. Mine got just a touch dry, because I had to leave it in a bit longer. The middle wasn't cooked. Oh well, it had a little crust on top, and I like that crunch it made. Thanks for the recipe.

  5. I wonder if you can replace the sugar with applesauce and something else (rice flour?) with the white flour. Might try it!
