Baked Oatmeal

Here's a great holiday breakfast. It serves a lot of people and can be prepared the night before and reheated in the morning. The original recipe came from a Harrisburg, PA bakery that is now out of business.

Baked Oatmeal

2 eggs
1/2 cup canola oil
1 scant cup sugar
3 cups old fashioned oatmeal
1 teaspoon baking powder
1 teaspoon salt
1 cup vanilla soy milk
1 can peaches, drained*
cinnamon

Preheat oven to 350 degrees. Mix together the eggs, oil, and sugar. Add the rest of the ingredients, except the peaches, and mix. Pour into a 9x9 or 8x11 inch baking pan. Top with peach slices, and sprinkle with cinnamon. Bake for thirty minutes.

The oatmeal can be served warm or at room temperature. Extra soy milk can be served on the side.

* You can replace some of the soy milk with the reserved peach juice, if desired.

  1. I had Monday off from work, which I desperately needed. I believe I have never been so stressed. It is truly remarkable what some delinquent 7th graders are capable of in a classroom, and almost moreso that my patience has lasted. So, I spent my day off relaxing and working in my apartment. I wanted to make a meal for my lunches this week, and after reading your blog, decided baked oatmeal would be perfect. And it was! Thanks for the recipe. Breakfast and lunch for two days straight. Mmmmm.

  2. Hi, Jarred! I'm glad you liked the oatmeal. Dad tried and tried to get the recipe from the bakery with no success, then someone in his office found it in a local Harrisburg magazine.

    I'm so sorry your job has been so stressful. I just keep hoping that it will be helpful to you in your interviews this spring and summer.

  3. The job has been rough, but worth it. The pay is decent and I am learning a lot. My classroom management skills are now borderline superhuman. I can even lift small cars with a thought. I am more than ready for a full time physics job now. I just wish an administration would wake up and recognize my potential. For pete's sake, I can lift small cars with my mind! Hire me!
