I'm helping with our church's VBS is this week from 6-8:30 every evening, which is kicking my tail and making the kids tired and out of sorts. Scott: "Don't you love Jebus?"
But the snacks are all dairy-free, thanks to the lovely woman in charge. She even asked the children if any of them had any food allergies of which she wasn't aware. Little Boy: "I'm allergic to my sister."

I was talking with my dad about beets, and he said, "I like to think of myself as being someone who likes beets."
I feel exactly the same way. We get some in our weekly share of vegetables from our CSA, and I don't know what to do with them. What do you do with beets? I mean, besides bake them in cake.

I looooove beets but my husband hates them. You can roast them and they will get all sweet and delicious. Or you can pickle them for salad toppings.
ReplyDeleteHmm, beets is NOT something we have gotten in our farm box yet. We've gotten a big bunch of cilantro (I don't know what to do with ALL that cilantro) and plenty of pickling cucumbers (which Matt pickled using the farm's recipe and they aren't great).
ReplyDeleteI have to comment, because I loved "I'm allergic to my sister." HA HA HA HAHAHAHA! We used to try to convince my youngest sister that she was adopted. :P Meanies, I know.
Oh man, I am so freaking jealous that you have the opportunity to get a farm share. Where I live, there are NO CSA farm share operations in. the. state. And the closest farmer's market is 30 miles away. So, supremely jealous. Thought you might want to know. And feel lucky. And stuff.
ReplyDeleteWe just got beets last Saturday from our community farm. We roasted them, cooled them, peeled them, and sliced them. Then serve them with diced onions, shallots or scallions, and serve with a vinaigrette. Yummy sweet salad.
ReplyDeleteYou roast beets and then toss them with olive oil, sea salt and pepper. Then you take the green tops, lightly boil that and toss them with vinegar. Yum
ReplyDeleteYou can add them to salads for a crunchy treat!
ReplyDeleteOr, I think you can make a Polish soup out of them. Maybe add them to a smoothie treat?
